menu plan Monday

This will officially wrap up the month of April. It seems no matter how hard I try to stay on track I always end up several meals short by month end. I guess my intentions were great but there were nights when I could not muster up the energy to make what I planned and had to resort to something easy (hanging head in shame). In all honesty we had the plague sweep through our house and many nights were spent praying to the porcelain gods rather than sautéing shrimp. I plan to spend the night on the couch drafting up May's plan and will try once again to stay focused and stick to the plan, pending any virus that may crop up.

Monday - Tuna casserole (again) this is by far my favourite meal and I could easily eat this once a week if the rest of the family would let me. Wait a minute!! I am the one cooking and I doubt anyone would challenge me on this because last I checked there were no volunteers to take over cooking duty.

Tuesday - One pot saucy bake - A mixture of hamburger, pasta sauce, mushrooms, peppers and cheese. This dish is never the same but is always good and a great stand by. I don't care for hamburger so I always place these dishes on Tuesday as I have my horseback riding lesson and can easily skip supper that night.

Wednesday - Tomato soup and grilled cheese. I found this great recipe from Taste of home and thought I could jazz up the regular grilled cheese we normally eat.

Thursday - Thanksgiving leftover pie - I found some frozen cubed turkey in the freezer and can whip this little gem up in no time. Simply spread a prepared box of stuffing in a greased pie plate and add turkey, some cheese and beat together 3 eggs and 1/2 cup milk to add to dish. Bake 350 for 35-40 minutes.

Friday - Oven Fish n chips. Our local store had haddock fillets on sale so I thought this was a perfect time to make this for our take out night

Saturday - Bisquick quiche casserole - Not a family favourite by all means but definitely up there on my list. I love that you can add what leftover veggies you have and it always turns out fabulous

Sunday - Grilled pork tenderloin and chinese rice casserole .

Add the following to a large turkey roaster

7 cups water (use liquids from cans)

4 cups converted rice

2 cans mushrooms

7 cut up celery stalks

1 green pepper

1 can pineapple

2 packages of onion soup mix

1/4 cup oil

1 cup soya sauce

Bake 350 for 1 hour.

For more great menu ideas visit Organizing Junkies wonderful site
