mpm2 Friday morning we (my wonderful husband) managed to snag a good deal on some chicken.  Saturday morning I woke up to a boatload of poultry that had to be dealt with so I set forth to tackle the job.  First I tossed all of the legs into a large pot to boil and once cooked I kindly asked my hubby to de bone the meat (a job I cannot stomach). He saved all of the remnants for a broth that I allowed to simmer all day combined with some veggies and seasonings.  With the cut up chicken I was able to make 2 meals of barbecue drumsticks with a home made barbecue sauce and a large casserole of chicken and stuffing casserole, 2 large portions of creamed chicken to top over rice plus 4 jars of broth for future meals. 

Monday - After spending the majority of the day Saturday and part of Sunday working in the garden, I wanted something quick and easy.  I decided to thaw one of the jars of broth and heat along with some margarine, flour, milk and spices to create a basic sauce.  I dumped in some frozen veggies and some leftovers skillet corn and topped it off with chunked frozen chicken breasts that I found in the back of the freezer.  I decided to serve this over some brown rice cooked in some broth and seasonings.

Tuesday - tuna buns and macaroni and tomatoes. This is so simple and involves mixing tuna with mayo and spreading on toasted buns.  Once cooked the macaroni is added to a bowl of canned stewed tomatoes.  Does it get any easier than that?...OK, other than McDonalds!

Wednesday - BLT sandwiches and chicken soup.  I am going to try these on my new favourite bread machine recipe of honey whole wheat

Thursday - Easy Shrimp primavera.  This is an easy recipe I found in the Kraft magazine. I always have the ingredients on hand and the shrimp normally comes on sale for half price a bag.

Friday - homemade fries and nuggets.  Depending on how the week went I may cheat and cook some frozen packaged nuggets (and If I'm thinking that on a Sunday evening I can guarantee you It will be )

Saturday - Blender waffles - To offset the unhealthy above mentioned meal I plan to whip up a batch of these yummy waffles.  I have on hand a variety of whole grains including millet and spelt flakes that I want to try and this recipe allows me to mix and match different ones.  Because they are grinded in a blender and soaked overnight you get the option of whole grain cooking with the convenience and ease of regular flour.

Sunday - crepes.  Normally we reserve this recipe for Christmas morning and it has become a yearly tradition since Landon was born.  I simply forgot about them and they are so easy and healthy if you choose fruit either frozen or from a can.  We did pick up a half price pineapple, cantaloupe and box of strawberries and only had to purchase a few kiwi and bananas in addition to the final can of peaches and a fruit cocktail left in the pantry.  For topping we like whipped cream, syrup, homemade yogurt and some melted chocolate .  Whenever I have some leftover fruit I always freeze them for either fruit smoothies of for recipes such as this.  Frozen grapes, peaches, kiwi, berries and pineapple work wonderful wrapped up in a warm crepe.

I just picked up a bread machine at the thrift store for $5 (minus an instruction manuel) hoping it will inspire me to make homemade bread more often;)

Your menu sounds wonderful. The bread recipe sounds good. My problem is I don't like the giant loaf that my bread machine makes, so I like to remove it after the dough cycle and bake in the oven. But then I have to figure out the time/temp to make it just right. This sounds like a good one to try.
And I think I'm going to try some crepes one morning this week! Thanks for the inspiration!

Jen, great idea about taking it out, I often get lazy and let the machine do everything. hard to believe I used to do all of my bread by hand. What is your blog address?
