Monday - Fish cakes and green bean bake.
I saw this recipe in the latest issue of Kraft magazine. I have several jars of frozen shredded carrots that I use for carrot cakes. This would cut down on prep time and the other half can be used for a cake.
Tuesday - Taco salad bowls. This also came from the Kraft magazine. Dad loves anything taco related so this would be an appropriate dish to try
Wednesday - Beef barley soup and sour cream rolls. The recipe actually calls for Wheat berries but when inquiring on such a product everyone looked at me like I had two heads. I finally settled on barley at the local bulk food store and hope this will be a decent substitute
Thursday - Chili and cornbread. I make a large pot of chili in the crockpot and separate the leftovers in small containers. This can easily be stashed in my hubby's lunch on days when there are no leftovers
Friday - Take out pizza. We recently held a fundraiser for the disabled riding program that operates out of our facility. For $20 we can feed a family of 6. Well worth it for the night off from cooking
Saturday - French toast casserole. My mom found this recipe in the local paper. We tried it several months back and it became an instant hit.
In a medium bowl whisk together 4-6 eggs, 1 1/2 cup milk, 1 tsp vanilla and 1/8 teaspoon salt. set aside
In a saucepan heat the following until dissolved (approx. 2 minutes) :2/3 cup packed brown sugar, 1/2 cup maple syrup, 1 tablespoon butter.
Pour hot syrup into bottom of 9x13 pyrex dish and place two layers of homemade bread over top. Pour egg mixture over bread and bake 375 for 30-40 minutes. can top with powdered sugar and strawberries
Sunday - Turkey dinner. On my latest trip to the grocery store for the morning deals, I was one of three lucky shoppers to snag myself a bird....without losing an eye.
