These are the easiest, healthiest, heartiest waffles ever.

waffles 

The night before I simply dump a bunch of stuff in my blender. Ok I guess I should be a little more specific.

 

2 cups of whole grains. - I use whatever I have.  A little millet, some spelt flakes, a touch of quinoa and finally some form of flour (I prefer whole grain) In the past I have used regular oatmeal and flour mixture.  This is a great way to use up the small remnants of grains before your next shopping day.

1 cup of milk

1 cup of yogurt 

Give it a grind in the blender and add more milk if it's not spinning.  The next morning start adding the following:

1 egg

1 teaspoon vanilla

1 Tablespoon oil

1 teaspoon baking powder

1/4 teaspoon baking soda

1 Tablespoon flax seeds

You can throw in there whatever else suits your fancy.  Really! you can add anything (waffle related) as long as the consistency stays somewhat thick.  Confusing I know but trust me when I say they are pretty hard to screw up.  The nice thing with these waffles is they provide a filling breakfast that will not leave you hungry in a matter of hours.  I usually make up a large batch and freeze the extras to throw into the toaster on busy mornings.  They are even great for lunch topped with some fruit and homemade yogurt.

Sounds yummy, and also a great way to get in those healthy grains. Waffles work for ANY meal in my house. I'm low on my grains right now, but I'm defintely going to give these a try soon.

Actually you would have to pick them up at the Bulk Barn. S/s has them in the natural section...the one that no one ventures in because of the price. They are much cheaper than at the B/B. Whole grains are so good and this is a great way to start using them. I will fill you in more tommorrow.
