Monday - lasagna

Tuesday - French toast casserole - I make this dish often due to the abundance of leftover homemade bread.  When a day or two passes and the loaf is uneaten, I simply slice it up and stick it in the freezer.  The frozen portions are ideal for this recipe even if there are several varieties of bread.  Really! who can tell anyway when they are smothered in 3 inches of syrup.

Wednesday - Mexican casserole - This is a simple casserole made with soaked brown rice, shredded chicken, salsa, cheese and corn.  Basically I just threw a bunch of stuff in a pan and hoped for the best.  I made two of these for the freezer so if the first one is a flop...too bad! the family has another one to suffer through.  I plan to make some whole grain rolls or bread sticks to accompany this.

Thursday - molasses crock pot pinto beans - This is from a batch I had made up in the crockpot.  We came home from a family outing after eating a massive amount of fried clams, fried onions, fried fish and thought beans were way to healthy to consume that evening, so we opted for ice cream instead.

Friday - chicken and quinoa stew

Saturday - potato pancakes

Sunday - Sticky chicken breasts and hodge podge - The sticky chicken is a recipe I normally use on whole chicken.  I simply combined the required spices and coated some bone in chicken breasts that I froze. 

Hodge podge is a favourite dish this time of year. With the abundance of fresh local produce we combine mini potatoes, fresh baby carrots and peas or beans with some butter and whole milk.  The nice part about this recipe is the ease of preparation because the produce normally does not need to be peeled, you just have to cut and toss into the pot.
