Despite the continuing heat wave, I am planning the following for our week.

Monday - Chicken broccoli stuffing casserole.  Since I forgot to make our turkey dinner (see Sunday's little disaster) I am going to make a dish with the homemade stuffing that I has been piling up in the freezer.  This should be a nice substitute until the next attempt at a turkey dinner.

Tuesday - mushroom Swiss grilled cheese - I love frying up some frozen mushrooms in butter, adding some fresh sliced tomatoes topped with low fat mayonnaise and melted cheese.   I squish all of this stuff between two pieces of homemade whole grain bread and brown it using our George Foreman grill.  Yum!

Wednesday - My hubby works late on Wednesday's so I normally make something easy for the three of us.  This also gives me a night to catch up on baking or other important jobs...actually giving the kids a bath would be a good example.  Wading pools nor sprinkler's count as a bath, right?

Thursday - whole grain pasta and homemade pasta sauce with bread machine rolls.  This is the last of the large batch of pasta sauce I made with some cut up zucchini.  I just checked our zucchini plant and I see dozens of those little veggies taking off so I have to make room for the upcoming onslaught.

Friday - Turkey divan pizza.  I recently bought a behemoth bag of broccoli and after making Monday's dinner should have plenty left for this little twist on traditional pizza

Saturday - Baked Oatmeal - I am going to try whole oats soaked instead of steel cut.  I know this grain should be soaked for more than the required 12 hours so I am going to try to remember to soak the previous morning to get a full 24 hours in.  Seeing how well I remembered the turkey this may or may not happen

Sunday - Turkey dinner - We were supposed to have turkey dinner last Sunday but thanks to me, we did not.  I conveniently remembered Saturday night to take out the frozen 15 lb bird for the following evening.  Pancakes and beans were a quick substitute and although tasty were far from the anticipated turkey and all of the fixings

Everything sounds so good. I love the idea of toasting a sandwich in the George Foreman. I've never thought of that before! I think I'll try it when we have grilled cheese this week. Thanks for the idea.

I love my George Foreman. I use this instead of investing in a sandwich maker. One less appliance.

Your menu looks great, I really love your Tuesday idea I also might need to borrow that! We tend to do breakfast for dinners too in the summer, they are fun, not the norm and easy! BTW, I count wading pools as baths! I just bring the soap out and at the end, wash the kid! Gotta dump the water anyway and since we use a soap that isn't harmful to the environment, no biggie when dumping the water. (It's all about easy in the summer!)

I'm definately showing up for Tuesday, Thursday, and Friday :)

What brand of wheat pasta do you use? Some of them are just too grainy for me, so I'm still hunting for the best-tasting one.

I HATE it when I forget to take my meat out the night before; I know many who just defrost it in the microwave, but I just don't care for doing it that way.

Sometimes I do, Our kitchen is so hot at times it gets to the point it doesn't really matter, what's another 10 degrees. we need an air conditioner. You know you are welcome any time, especially on your way back from NF.
